Easy Mexican Rice Recipe

- 1 cup long grain white rice
- 2 tablespoons vegetable oil
- ¼ cup chopped onion
- 2 cloves garlic minced
- 1 ½ cups chicken broth or vegetable broth
- ½ cup tomato sauce or diced tomatoes
- ½ teaspoon ground cumin
- Salt to taste
- Optional: frozen peas or carrots for added color
In a medium saucepan, heat oil over medium heat.
Add rice and cook, stirring often, until lightly golden brown.
Stir in chopped onion and garlic. Cook for another 2–3 minutes.
Add tomato sauce, broth, cumin, and salt. Stir to combine.
Bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes.
Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork and serve.
