Ingredients
  

  • 1 cup long grain white rice
  • 2 tablespoons vegetable oil
  • ¼ cup chopped onion
  • 2 cloves garlic minced
  • 1 ½ cups chicken broth or vegetable broth
  • ½ cup tomato sauce or diced tomatoes
  • ½ teaspoon ground cumin
  • Salt to taste
  • Optional: frozen peas or carrots for added color

Instructions
 

  • In a medium saucepan, heat oil over medium heat.
  • Add rice and cook, stirring often, until lightly golden brown.
  • Stir in chopped onion and garlic. Cook for another 2–3 minutes.
  • Add tomato sauce, broth, cumin, and salt. Stir to combine.
  • Bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes.
  • Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork and serve.
