  • 1 pound ground beef, 80/20 Cold; preferably ground chuck.
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon Worcestershire sauce
  • oil For the grill grates.
  • 4 hamburger buns, toasted For serving.
  • cheese, lettuce, tomato, onion, pickles Optional toppings.

  • Preheat the grill to medium-high (400 to 450°F), scrape the grates clean, and oil them.
  • Gently mix the beef with the salt, pepper, garlic powder, onion powder, and Worcestershire for 20 to 30 seconds.
  • Divide into 4 portions, shape into 3/4-inch patties slightly wider than the buns, and press a dimple in each center. Chill 10 minutes if the meat is warm.
  • Grill dimple side up with the lid closed 4 to 5 minutes without pressing. Flip once and cook 4 to 5 minutes more until 160°F.
  • Rest 5 minutes, then serve on toasted buns with toppings.

Notes

Ground beef should reach 160°F. Refrigerate cooked patties within 2 hours and use within 3 to 4 days. Nutrition is an estimate for one patty without a bun.
