Ingredients
  

  • 1 cup chopped dates
  • 1 cup boiling water
  • 1 tsp baking soda
  • ½ cup unsalted butter softened
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ¾ cups all-purpose flour
  • ½ tsp salt
  • ½ cup chopped walnuts or pecans

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set aside.
  • In a bowl, combine chopped dates, baking soda, and boiling water. Let sit for 10–15 minutes to soften.
  • In a large mixing bowl, cream together the butter and brown sugar until light.
  • Beat in eggs and vanilla extract.
  • Stir in the date mixture (including liquid).
  • Add flour and salt; mix until just combined.
  • Fold in chopped nuts.
  • Pour batter into the prepared loaf pan.
  • Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
