  • 2 large russet or Yukon Gold potatoes peeled and cut into 1/4 inch matchsticks
  • 1 tsp salt
  • ¼ tsp dried oregano
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ⅛ tsp black pepper
  • 1 tsp paprika
  • 3 tbsp olive, avocado, or vegetable oil

Cooking

  • Soak the cut potatoes in cold water for 15 to 30 minutes.
  • Rinse and dry the potatoes very well.
  • Heat the oven to 425 degrees F and line a baking sheet with parchment paper.
  • Toss the potatoes with the salt, oregano, garlic powder, onion powder, pepper, paprika, and oil.
  • Spread in a single layer with space between each piece. Bake for 15 minutes, then flip.
  • Bake 15 to 20 minutes more until crisp outside and tender inside. Rest about 5 minutes before serving.

Notes

Prep time includes the soak. Use two pans if the fries crowd. Reheat in a 350 degrees F oven to bring back crispness. Nutrition is an estimate.
