Easy Roast Potatoes

Crispy on the outside and soft on the inside, these easy roast potatoes are a perfect side dish for any meal.

Ingredients
  

Main Ingredients

  • 1 kg baby potatoes, halved (or other small potatoes)
  • 4 tbsp extra virgin olive oil
  • 1 tsp cooking/kosher salt
  • ¼ tsp black pepper
  • 5 cloves garlic with skin on, smashed
  • 5 sprigs thyme (or 3 rosemary sprigs)
  • to taste finely chopped parsley or fresh thyme (optional)

Instructions
 

Preparation

  • Preheat your oven to 200°C / 400°F (180°C fan).
  • To prepare the garlic, place the side of a knife on an unpeeled clove and hit it firmly with your palm to slightly crush it but keep it mostly intact.
  • In a tray, place the halved potatoes close together. Drizzle them with olive oil, and sprinkle with salt and pepper. Toss to coat the potatoes well.
  • Add the smashed garlic and thyme sprigs to the tray, then spread the potatoes out evenly.

Roasting

  • Roast the potatoes for 30 minutes.
  • After 30 minutes, toss the potatoes gently, then roast for an additional 25 to 35 minutes, or until they are golden brown and crispy.

Serving

  • Once done, sprinkle with chopped parsley or fresh thyme if using, and serve immediately!

Notes

Tips: Choose potatoes that are similar in size for even cooking. Make sure to use enough oil for a crispy texture. Don’t overcrowd the tray; use two trays if necessary. For extra flavor, add other herbs or spices.
