Ingredients
  

  • 1 tablespoon olive oil or butter
  • 1 cup long grain white rice
  • 1 can 10 oz Rotel diced tomatoes and green chilies (undrained)
  • 1 ½ cups chicken broth
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • Salt to taste
  • Optional: chopped cilantro or green onions for garnish

Instructions
 

  • In a medium saucepan, heat olive oil or butter over medium heat.
  • Add rice and sauté for 2–3 minutes until slightly golden.
  • Pour in the Rotel (with liquid), chicken broth, and spices. Stir to combine.
  • Bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes or until the rice is cooked and liquid is absorbed.
  • Fluff with a fork, garnish if desired, and serve warm.
