- 1 tablespoon olive oil or butter
- 1 cup long grain white rice
- 1 can 10 oz Rotel diced tomatoes and green chilies (undrained)
- 1 ½ cups chicken broth
- ½ teaspoon garlic powder
- ½ teaspoon cumin
- Salt to taste
- Optional: chopped cilantro or green onions for garnish
In a medium saucepan, heat olive oil or butter over medium heat.
Add rice and sauté for 2–3 minutes until slightly golden.
Pour in the Rotel (with liquid), chicken broth, and spices. Stir to combine.
Bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes or until the rice is cooked and liquid is absorbed.
Fluff with a fork, garnish if desired, and serve warm.
