- 4 fully-cooked chicken sausage links about 12 oz
- 1 red bell pepper
- 1 small red onion
- 1 head broccoli
- 1 sweet potato about ½ lb.
- 3 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- 1½ teaspoons dried oregano
- 1 tablespoon chopped parsley optional
Prepare Ingredients:
Slice the chicken sausage into diagonal medallions.
Chop the red bell pepper into 1-inch chunks.
Slice the red onion into ½-inch slices.
Cut the broccoli into small florets.
Peel and dice the sweet potato into ¾-inch cubes.
Season:
In a large bowl, combine the sliced sausage and chopped vegetables. Drizzle with olive oil and season with salt, black pepper, garlic powder, and dried oregano. Toss until everything is evenly coated.
Bake:
