  • 1 lb large shrimp peeled and deveined
  • 2 bell peppers sliced, any colors
  • 1 medium onion sliced
  • 2 tbsp olive oil divided
  • 2 tbsp fajita seasoning
  • salt and black pepper to taste
  • 8 small flour tortillas (6 inch) warmed
  • lime wedges for serving

  • Pat the shrimp dry and toss with 1 tablespoon of the oil, the fajita seasoning, and a pinch of salt and pepper. Let stand 15 minutes.
  • Heat a large skillet over medium-high heat and add the remaining oil. Cook the shrimp in a single layer for 2 to 3 minutes per side, until pink and opaque. Move to a plate.
  • Add the peppers and onion to the same skillet and cook for 5 to 7 minutes, stirring often, until tender with a few browned edges.
  • Return the shrimp to the skillet and toss for about 1 minute. Squeeze lime juice over everything.
  • Warm the tortillas and fill with the shrimp and vegetables. Serve with lime wedges and toppings.

Notes

Refrigerate leftovers within 2 hours and use within 3 days. Store tortillas separately and reheat the filling gently so the shrimp stay tender. Prep time includes a 15 minute marinade. Nutrition is an estimate and includes two tortillas per serving.
