Ingredients
  

  • 1 cup pitted Medjool dates
  • 1 cup rolled oats
  • ½ cup nut butter e.g., peanut butter or almond butter

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a food processor, blend the pitted dates until a sticky paste forms.
  • Add oats and nut butter to the food processor and pulse until well combined and dough-like.
  • Scoop out tablespoon-sized portions and roll into balls. Flatten slightly into cookie shapes and place on the baking sheet.
  • Bake for 12–15 minutes, or until edges are slightly golden.
  • Let cool on the pan for a few minutes, then transfer to a wire rack to cool completely.
