- 4 boneless skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup heavy cream
- ½ cup prepared basil pesto
- ¼ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- Optional: Fresh basil leaves for garnish
Season the chicken breasts with salt, pepper, and garlic powder on both sides.
In a large skillet over medium heat, heat olive oil and sear the chicken for 5–6 minutes per side until golden brown and cooked through. Remove and set aside.
In the same skillet, reduce the heat to low and add the heavy cream and pesto. Stir to combine and simmer for 2–3 minutes.
Stir in Parmesan cheese and continue to simmer until slightly thickened.
Return the chicken to the skillet and spoon the sauce over the top. Simmer for an additional 2–3 minutes to heat through.
