  • 12 pieces eggs
  • 1 cup whole milk
  • 2 cups grated cheddar cheese (or Monterey Jack)
  • 7 slices thick sliced bacon
  • 8 oz rotisserie chicken (or any lunch meat)
  • 6-7 cloves crushed garlic
  • 2 pieces fresh tomatoes diced
  • ½ tsp sea salt
  • ½ tsp black pepper

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, whisk together the eggs and whole milk until fully combined.
  • Add the grated cheese, sea salt, and black pepper to the egg mixture.
  • In a skillet, cook the bacon over medium heat until crispy. Remove the bacon and chop into pieces.
  • In the same skillet, add crushed garlic and cook for about a minute, then add the rotisserie chicken. Stir to heat through.
  • In a greased baking dish, layer the chopped bacon, garlic, chicken, and diced tomatoes.
  • Pour the egg mixture over the layers in the baking dish.
  • Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the top is golden.
  • Allow to cool slightly, then cut into squares and serve.
