- 1½ cups all-purpose flour
- 1 cup sugar
- 1 tsp baking soda
- ½ tsp salt
- 1 cup milk or plant-based milk for vegan
- 1 tbsp vinegar or lemon juice
- ⅓ cup vegetable oil
- 1 tbsp vanilla extract
- Optional frosting:
- Buttercream or whipped cream
- Fresh fruits or sprinkles
Preheat oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
In a large bowl, whisk together flour, sugar, baking soda, and salt.
In another bowl, combine milk and vinegar. Let sit for 5 minutes to curdle.
Add oil and vanilla to the milk mixture and mix well.
Pour wet ingredients into dry and stir until just combined (do not overmix).
Pour batter into prepared pan and smooth the top.
Bake for 30–35 minutes or until a toothpick inserted comes out clean.
Let cake cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
Frost or serve as desired.
