Ingredients

  • 5 cups shredded green cabbage
  • 2 cups shredded red cabbage or more green cabbage can be used
  • 1 cup shredded carrot or more cabbage can be used

Dressing Ingredients

  • ¼ cup cider vinegar
  • 2 tbsp oil (vegetable, canola, or light olive oil)
  • 1 ½ - 2 tbsp white sugar adjust to taste
  • 1 tsp Dijon mustard
  • ½ tsp salt

Instructions
 

Preparation

  • Shake the dressing ingredients in a jar, starting with 1 1/2 tbsp sugar and adjust to taste.
  • Place the salad ingredients in a large bowl.
  • Pour the dressing over the salad and toss everything together.
  • Set aside for 20 minutes to allow flavors to meld and the salad to become juicy.
  • Serve and enjoy your salad.

Notes

For added flavor, let the salad sit for a few extra minutes before serving. You can customize the salad by adding bell peppers, celery, or nuts and seeds.
