Ingredients
  

Dry Ingredients

  • ¼ cup flour (plain/all-purpose)
  • ¼ cup cornflour/cornstarch
  • ¼ tsp baking soda (or 3/4 tsp baking powder)

Wet Ingredients

  • 1 large egg
  • 2 tbsp milk (any type)

Main Ingredients

  • 2 cups fresh corn kernels (from 2 cobs; canned or frozen also fine)
  • ½ cup parmesan (finely grated)
  • ¾ cup green onions (sliced)
  • ½ cup coriander/cilantro (roughly chopped, can substitute with more green onion)

Cooking Ingredients

  • ½ cup vegetable oil for frying
  • to taste oil spray to prevent sticking

Instructions
 

Preparation

  • Preheat your oven to 120°C (250°F) and set a wire rack on a baking tray.
  • In a bowl, mix the flour, cornflour, and baking soda together.
  • Crack the egg into the bowl and add the milk. Mix until everything is combined (the batter will be lumpy and thick).
  • Add the corn, parmesan, green onions, and coriander to the batter. Mix until the corn is evenly coated.

Cooking

  • Heat enough oil in a skillet to cover the bottom. Set the heat to medium-high.
  • Spray the underside of a spatula with oil to prevent sticking.
  • Scoop 1/4 cup of batter into the skillet and flatten it to about 1 cm thick. Repeat with 2 or 3 more fritters, but don’t overcrowd the pan.
  • Cook for about 3 minutes until golden and crispy, then flip and cook for another 2-3 minutes.
  • Transfer the fritters to the rack in the oven to keep warm. Repeat with the remaining batter, adding more oil as needed.

Serving

  • Serve hot with your preferred dipping sauce!

Notes

Use fresh corn for the best flavor. Ensure the oil is hot enough before adding fritters to achieve crispiness. Cook in batches to prevent steaming.
