Ingredients
  

Main Ingredients

  • 10 pieces bone-in, skin-on chicken thighs (about 3 lbs, trimmed)
  • 1 Tbsp baking powder do NOT use baking soda, it’s NOT the same
  • 2 tsp kosher salt plus more to taste
  • 2 tsp sweet paprika
  • 1 tsp black pepper
  • 3 Tbsp Buffalo wing sauce plus more to taste

Instructions
 

Preparation

  • Preheat your oven to 450°F.
  • Dry the chicken thighs with paper towels really well. Try to get them as dry as possible.
  • Sprinkle on the salt, paprika, pepper, and baking powder. Gently rub the mixture over the chicken, ensuring even coverage.
  • Lay the chicken thighs on a cooling rack, leaving some space between each piece. Optionally, spray the rack with PAM or rub it with oil to prevent sticking.
  • Transfer the chicken thighs to a large baking sheet lined with aluminum foil and/or parchment paper for easy cleanup.

Cooking

  • Place the baking sheet in the oven and switch the oven to 425°F convection.
  • Bake for 30 minutes for moderate crispiness or 35-40 minutes for ultimate crispiness and tender meat.
  • Remove the thighs from the oven and let them rest for 5 minutes.
  • Toss the thighs in Buffalo wing sauce or your preferred sauce. You can also serve with a dipping sauce on the side.

Notes

Let the chicken cool down to room temperature before storing. When reheating leftovers, use the oven to restore crispiness.
