Fiesta Ranch Chicken Pasta Salad

Ingredients
  

For the dressing

  • cup milk
  • cup sour cream
  • 1 ounce ranch seasoning packet fiesta, spicy, or regular
  • 1 jalapeno (deseeded and diced) divide one for slicing

Main ingredients

  • 1 pound pasta cooked according to package directions
  • 1 can black beans drained and rinsed
  • 1 cup corn canned, fresh, or frozen
  • ½ red bell pepper diced
  • 1 ½ cup cooked chicken diced
  • ½ cup cherry tomatoes halved
  • 1 cup shredded cheese pepper jack, cheddar, or other
  • 2 tablespoons fresh cilantro chopped
  • 1 ½ cups corn chips

Instructions
 

Preparation

  • In a small bowl, mix the milk, sour cream, ranch seasoning, and the diced jalapeno. Stir well to combine and set aside.
  • In a large mixing bowl, combine the cooked pasta, black beans, corn, diced bell pepper, chicken, cherry tomatoes, shredded cheese, and 1 ½ tablespoons of chopped cilantro. Stir everything together until well mixed.

Assembly

  • Pour the dressing over the salad and mix to coat all the ingredients.
  • Serve the salad in bowls, topping each serving with corn chips and a sprinkle of cilantro.

Notes

Best served cold or at room temperature. Great as a side dish or on its own. Add extra corn chips for crunch and pair with grilled meats or sides.
