Flavorful Greek Lemon Rice

- 1 cup long grain rice preferably Basmati
- 2 tablespoons olive oil
- 2 garlic cloves minced
- 1 small onion finely chopped
- 2 cups vegetable broth or chicken broth
- Juice and zest of 1 large lemon
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley optional, for garnish
Rinse the rice under cold water until the water runs clear. Drain well.
In a medium saucepan, heat olive oil over medium heat.
Add the chopped onion and garlic. Sauté for 2–3 minutes until softened.
Stir in the rice and cook for 1–2 minutes to coat it in the oil and lightly toast.
Pour in the broth, lemon juice, lemon zest, oregano, salt, and pepper. Stir well.
Bring to a boil, then reduce the heat to low. Cover and simmer for 18–20 minutes, or until the rice is tender and the liquid is absorbed.
Remove from heat and let sit for 5 minutes.
Fluff with a fork and garnish with fresh parsley before serving.
