Ingredients
  

  • 1 cup long grain rice preferably Basmati
  • 2 tablespoons olive oil
  • 2 garlic cloves minced
  • 1 small onion finely chopped
  • 2 cups vegetable broth or chicken broth
  • Juice and zest of 1 large lemon
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley optional, for garnish

Instructions
 

  • Rinse the rice under cold water until the water runs clear. Drain well.
  • In a medium saucepan, heat olive oil over medium heat.
  • Add the chopped onion and garlic. Sauté for 2–3 minutes until softened.
  • Stir in the rice and cook for 1–2 minutes to coat it in the oil and lightly toast.
  • Pour in the broth, lemon juice, lemon zest, oregano, salt, and pepper. Stir well.
  • Bring to a boil, then reduce the heat to low. Cover and simmer for 18–20 minutes, or until the rice is tender and the liquid is absorbed.
  • Remove from heat and let sit for 5 minutes.
  • Fluff with a fork and garnish with fresh parsley before serving.
