Main Ingredients

  • ½ cup cottage cheese Low-fat cottage cheese works well
  • 3 large eggs, separated Carefully separate egg whites and yolks
  • ¼ teaspoon cream of tartar Helps stabilize the egg whites
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon garlic powder (optional) You can add other herbs or spices
  • 1 teaspoon honey or sugar (optional) Add for sweetness

Preparation

  • Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the cottage cheese and egg yolks. Mix until smooth.
  • In a separate bowl, beat the egg whites with cream of tartar until stiff peaks form.
  • Gently fold the egg whites into the cottage cheese mixture until well combined.
  • Add baking powder, salt, and optional garlic powder or honey/sugar to the mixture. Fold until combined.
  • Spoon the mixture onto the prepared baking sheet, forming rounds.
  • Bake for about 30 minutes or until golden brown.
  • Allow to cool before serving.

Notes

Store in an airtight container at room temperature for up to 2 days. Freeze with parchment paper between each piece to prevent sticking.
