  • 1.5 cups Warm water Water should be warm but not hot to activate the yeast.
  • 2 teaspoons Instant yeast Active dry yeast can be used if proofed beforehand.
  • ¼ cup Extra virgin olive oil Use high quality for the best flavor.

Topping Ingredients

  • 2 tablespoons Fresh herbs (e.g., rosemary, thyme) Chopped or whole depending on preference.
  • 1 teaspoon Coarse sea salt For sprinkling on top before baking.

Preparation

  • In a large mixing bowl, combine the flour and salt.
  • In another bowl, mix warm water with yeast until frothy.
  • Pour the yeast mixture into the flour gradually, stirring until a shaggy dough forms.
  • Transfer the dough to a lightly floured surface and knead gently for about 5 minutes until smooth.
  • Optionally refrigerate the dough for 8 to 24 hours to enhance flavor.

Rising

  • Place the dough in a greased bowl, cover with plastic wrap or damp cloth, and let rise in a warm area for about 1 hour or until doubled.
  • Grease baking pans with olive oil, gently deflate the dough, and divide into portions.
  • Shape the dough pieces and place them in prepared pans, allowing to rest briefly before baking.

Baking

  • Preheat the oven to 425°F (220°C).
  • Dimple the surface of the dough with your fingers, drizzle with olive oil, and sprinkle with fresh herbs and coarse sea salt.
  • Bake for 20-25 minutes or until golden brown.

Notes

Serve warm, and enjoy with dips like olive oil and balsamic vinegar, or use for sandwiches.
