  • 4 cups cooked rice Use day-old rice for best texture.
  • 3 tablespoons butter For sautéing the vegetables.
  • 1 onion, diced Adds flavor to the dish.
  • 12 ounces frozen peas and carrots Can be substituted with any vegetables you have.
  • 1 cup soy sauce Adjust according to taste.
  • 3 large eggs, beaten For protein; can be omitted for vegetarian options.

Preparation

  • Melt the butter in a large nonstick skillet over medium heat.
  • Add the diced onion and cook until it is tender and fragrant.
  • Mix in the frozen peas and carrots, stirring until they are heated through.
  • Push the veggies to one side of the skillet.
  • Pour the beaten eggs into the empty space and scramble them until they are cooked through.
  • Mix the scrambled eggs with the veggies.
  • Drizzle the soy sauce evenly over the mixture and stir to combine.
  • Gradually add the cooked rice, stirring until everything is well blended and heated through.
  • Serve warm.

Notes

Freakin' Fantastic Fried Rice is best served warm right after cooking. Garnish with chopped green onions or sesame seeds for an extra flavor boost. If you have leftovers, store them in an airtight container in the fridge for 3-4 days. Add a little water or oil when reheating.
