  • 4 medium apples peeled and sliced, a mix of sweet and tart
  • ½ cup sugar
  • ½ cup unsalted butter melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup rum or apple juice, or extra vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt

Cooking

  • Heat the oven to 350 degrees F (175 degrees C). Grease a 9-inch round cake pan.
  • Toss the sliced apples with the sugar in a large bowl and set aside.
  • In a second bowl, whisk the melted butter, eggs, vanilla and rum until smooth.
  • In a third bowl, combine the flour, baking powder and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Gently fold in the apples and any juice.
  • Spread the batter in the pan and bake for 40 to 50 minutes, until golden and a toothpick comes out clean.
  • Cool in the pan before slicing.
