Ingredients
  

For the Roll Ups

  • 4 pieces 12-inch flour tortillas
  • 4 slices Provolone cheese
  • 0.5 pound deli sliced roast beef
  • ¾ cup French fried onions
  • 1 tablespoon olive oil For brushing the tortillas

For the Au Jus

  • 1 can (10.5 ounces) beef consommé
  • ¾ cup water
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Lay the tortillas flat on your countertop.
  • Evenly distribute a slice of Provolone cheese, some roast beef, and a handful of French fried onions over each tortilla.
  • Roll each tortilla up tightly and place them seam-side down. Brush the edges with olive oil to seal them.

Baking

  • Place the rolled-up tortillas on the baking sheet, seam-side down, and brush the tops with the remaining olive oil.
  • Bake in the oven for about 10 minutes, or until the tortillas are golden brown and the cheese is bubbly.

Making the Au Jus

  • In a small pot, combine the beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder.
  • Heat over medium heat until warmed through.

Serving

  • Once baked, slice the roll-ups into bite-sized pieces and serve with the warm au jus for dipping.

Notes

For extra flavor, sauté some onions and peppers to add to the filling. You can also try different cheeses like cheddar or Swiss. For a spicy version, add jalapeños or hot sauce.
