Main Ingredients
- 6 to 7 large peaches sliced into wedges, about 2 pounds
- ½ cup granulated sugar for the peaches
- 2 tsp cornstarch
- ¼ tsp ground cinnamon for the peaches
- 1 tbsp fresh lemon juice
- 8 tbsp unsalted butter 1 stick
- 1 ¼ cup all purpose flour
- 1 ½ tsp baking powder
- ½ tsp kosher salt
- ½ cup granulated sugar for the batter
- ½ cup brown sugar packed
- ½ tsp ground cinnamon for the batter
- ¾ cup whole milk
- 2 tsp pure vanilla extract
Cooking
Preheat and slice. Heat the oven to 350 degrees F, wash the peaches, and cut them into wedges.
Toss the fruit. Combine the peaches with 1/2 cup sugar, cornstarch, cinnamon, and lemon juice and let stand.
Melt the butter. Place the butter in a 9x13 inch dish and heat it in the oven until melted.
Mix and pour. Whisk the dry ingredients and sugars, stir in the milk and vanilla, and pour the batter over the butter without stirring.
Top and bake. Spoon the peaches and juices over the batter and bake 40 to 45 minutes until golden and bubbling.
Cool. Rest for 5 minutes and serve warm with vanilla ice cream.
Substitutions: Use well drained thawed frozen peaches if fresh fruit is out of season.
Tips: Adjust the sugar to the sweetness of the fruit and pull the dish as soon as the butter melts.
Storage: Cover and refrigerate for up to 4 days. Reheat portions in the oven or microwave.
