Main Ingredients
- 1 cup ripe tomatoes chopped
- 2 fresh red chili peppers finely chopped
- 1 small onion diced
- 2 cloves garlic minced
- ¼ cup apple cider vinegar
- ¼ cup brown sugar packed
- ½ tsp kosher salt
- 1 pinch black pepper
- 2 tsp lime juice added at the end
Cooking
Combine. Add the tomatoes, chilies, onion, garlic, vinegar, sugar, salt, and pepper to a small saucepan over medium heat.
Simmer. Cook for 20 minutes, stirring now and then, until the sauce bubbles gently and thickens.
Texture. Mash the sauce for a chunky texture or blend it for a smooth one.
Finish. Remove from the heat, stir in the lime juice, and cool for 30 minutes.
Jar. Pour into a clean jar and refrigerate, where it thickens as it chills.
Substitutions: Use white vinegar in place of cider vinegar and canned diced tomatoes in place of fresh.
Tips: Wear gloves when chopping chilies and keep the seeds for extra heat. One serving is 2 tablespoons.
Storage: Refrigerate in a clean jar for up to 1 week.
