- 1 ½ lbs cod fillets cut into portions
- Salt and pepper to taste
- 1 cup all-purpose flour for dredging
- 2 large eggs beaten
- 1 cup breadcrumbs or crushed crackers
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- Vegetable oil for frying

Prep the Fish: Pat cod fillets dry and season with salt and pepper.
Prepare the Breading Station: Set up three shallow dishes: one with flour, one with beaten eggs, one with breadcrumbs mixed with garlic powder and paprika.
Bread the Fish: Dredge each fillet in flour, then dip in egg, then coat in breadcrumb mixture. Press gently to help coating stick.
Heat the Oil: In a skillet or frying pan, heat about 1/2 inch of vegetable oil over medium-high heat until shimmering.
Fry the Cod: Fry cod fillets 3–4 minutes per side until golden brown and cooked through (internal temperature 145°F / 63°C).
Drain and Serve: Transfer to a paper towel-lined plate to remove excess oil. Serve with lemon wedges and your choice of sides.
