For the Pineapple Rings

  • 1 whole fresh pineapple, peeled, cored, and sliced into 1/2-inch rings
  • 1 cup all-purpose flour
  • 1 tablespoon cornstarch
  • 1 tablespoon sugar
  • ¼ teaspoon ground cinnamon (optional) For added flavor
  • ½ teaspoon baking powder
  • 1 cup sparkling water or club soda

For the Dipping Sauce

  • ½ cup coconut cream (or full-fat coconut milk)
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • a pinch salt
  • Optional: toasted shredded coconut for garnish For extra texture and flavor

Instructions
 

Preparation

  • Prepare the batter by whisking together flour, cornstarch, sugar, cinnamon, and baking powder in a bowl.
  • Gradually add sparkling water, stirring until smooth. Set aside.
  • Heat vegetable oil in a deep pan to 350°F (175°C).

Frying

  • Dip the pineapple rings in the batter, letting the excess drip off.
  • Fry for 2-3 minutes per side until golden and crispy.
  • Drain on paper towels.

Dipping Sauce

  • For the sauce, whisk together coconut cream, powdered sugar, vanilla, and salt until smooth.
  • Chill for 10 minutes before serving.

Serving

  • Serve the warm pineapple rings with the dipping sauce and garnish with toasted coconut if desired.

Notes

Store any uneaten fried pineapple rings in an airtight container in the refrigerator. They are best eaten fresh but can be reheated. Keep the coconut sauce in a separate container and refrigerate.
