- 1½ pounds boneless skinless chicken breasts or thighs
- ¼ cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 4 cloves garlic minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried parsley
- Salt and pepper to taste
In a bowl, whisk together olive oil, lemon juice, mustard, garlic, thyme, rosemary, parsley, salt, and pepper.
Add chicken to a resealable bag or container and pour marinade over. Seal and refrigerate for at least 2 hours.
Preheat grill or oven to medium-high heat (or 400°F / 200°C).
Remove chicken from marinade and grill for 6–8 minutes per side, or bake for 20–25 minutes, until internal temperature reaches 165°F (74°C).
Rest for 5 minutes before serving.
