  • 2 boneless skinless chicken breasts about 6 oz each
  • 4 tbsp unsalted butter divided
  • 4 cloves garlic minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • chopped fresh parsley optional, for garnish

Instructions
 

Cooking

  • Pat the chicken dry and season both sides with salt and pepper.
  • Melt 1 tablespoon of the butter in a large skillet over medium heat.
  • Cook the chicken for 5 to 7 minutes on each side until golden and 165 degrees F in the thickest part.
  • Transfer the chicken to a plate and let it rest for a few minutes.
  • Lower the heat, melt the remaining 3 tablespoons of butter, and cook the garlic for about 30 seconds until fragrant.
  • Return the chicken to the skillet or pour the garlic butter over it. Garnish with parsley and serve.

Notes

Pound thicker breasts to an even thickness for even cooking. Use unsalted butter to control the salt. Refrigerate leftovers within two hours and eat within 3 to 4 days. Reheat to 165 degrees F. Nutrition is an estimate.
