Main Ingredients
- 1 lb boneless skinless chicken breasts
- 2 tbsp olive oil
- ½ tsp kosher salt
- ¼ tsp black pepper
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp chili powder optional
- 4 tbsp unsalted butter
- 4 cloves garlic minced
- 2 tbsp honey
- 8 taco shells
- 1 cup shredded lettuce
- ½ cup shredded cheese
- ½ cup salsa
Cooking
Coat the chicken. Mix the oil with the salt, pepper, and spices and rub it over the chicken until evenly covered.
Cook through. Sear in a medium skillet for 6 to 7 minutes per side until 165 degrees F inside, then rest 5 minutes and slice.
Make the glaze. Melt the butter in a second pan, cook the garlic for 30 seconds, then stir in the honey for 1 minute until glossy.
Toss together. Add the sliced chicken to the glaze and turn for about 1 minute until fully coated.
Fill and serve. Warm the shells, spoon in the chicken, and add lettuce, cheese, and salsa.
Substitutions: Use boneless thighs instead of breasts, or swap maple syrup for the honey.
Tips: Pound thick breasts to an even thickness and use a thermometer to pull the chicken at 165 degrees F.
Storage: Refrigerate the chicken for up to 3 days and keep shells separate. Honey is not safe for children under 1 year old.
