Garlic Butter Salmon with Spinach & Mushrooms in Creamy Sauce

Ingredients
  

For the salmon

  • 4 pieces salmon fillets (6 oz each)
  • 2 tbsp unsalted butter, softened For garlic butter preparation
  • 2 cloves garlic, minced
  • to taste Salt and pepper

For the creamy sauce

  • 2 tbsp unsalted butter
  • 1 cup mixed mushrooms (button, cremini, shiitake), sliced
  • 1 cup fresh spinach leaves
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese

Instructions
 

Preparation

  • Mix the softened butter, minced garlic, salt, and pepper in a bowl to prepare the garlic butter.
  • Season the salmon fillets with salt and pepper.

Cooking

  • Cook the salmon fillets in a skillet over medium-high heat for 3-4 minutes per side, or until cooked through.
  • In the same skillet, add the butter and sauté the sliced mushrooms until tender. Add the minced garlic and cook for 1 minute.
  • Add the fresh spinach leaves and heavy cream to the skillet. Stir until the spinach is wilted.
  • Stir in the grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  • Serve the garlic butter salmon with the creamy mushroom and spinach sauce spooned over the top.

Notes

Serve hot with a side of rice, quinoa, or a fresh salad. Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stove or in the microwave, adding a splash of cream to revive the sauce if needed.
