  • 2 cup long grain white rice rinsed until the water runs mostly clear
  • 4 cup water or chicken broth
  • ½ tsp salt
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • ¼ cup fresh cilantro chopped
  • 1 lime juiced, about 2 tablespoons
  • ¼ tsp black pepper

Instructions
 

Cooking

  • Rinse the rice under cold water until the water runs mostly clear.
  • Combine the rice, water, and salt in a pot. Bring to a boil, reduce to low, cover, and simmer for 18 to 20 minutes.
  • Remove from the heat and keep covered for 5 minutes.
  • Warm the olive oil and garlic in a small pan over low heat for about 30 seconds until fragrant.
  • Fluff the rice, then toss it with the garlic oil, cilantro, lime juice, and pepper. Serve warm.

Notes

Refrigerate leftover rice within 1 hour of cooking and use within 3 days. Reheat with a splash of water until steaming hot, and reheat only once. Nutrition is an estimate.
