Preparation

  • Preheat the oven to 400°F.
  • Toss whole carrots in olive oil, Italian herbs, salt, and pepper.

Roasting the Carrots

  • Roast the carrots for 25-30 minutes until tender and golden.

Cooking the Chicken

  • Season chicken with garlic, herbs, salt, and pepper.
  • Pan-sear in butter over medium-high heat for 4-5 minutes per side until golden and juicy.

Making the Mashed Potatoes

  • Boil red or gold potatoes (skin on) until fork tender.
  • Mash with butter, salt, and a splash of milk or cream for a creamy texture.
