Equipment

  • Grill
  • Skewers
  • Mixing bowl

Ingredients

Main Ingredients

  • 1 lb large shrimp 21 to 25 count, peeled and deveined
  • 3 tbsp olive oil
  • 4 cloves garlic chopped
  • 1 tbsp lemon juice fresh
  • ½ tsp salt
  • ½ tsp black pepper cracked
  • ½ tsp smoked paprika optional

Instructions

Cooking

  • Marinate. Pat the shrimp dry, then toss with the olive oil, garlic, salt, pepper, lemon juice, and paprika. Refrigerate 10 to 15 minutes, no longer.
  • Heat the grill. Preheat to medium high and brush the grates with oil.
  • Skewer. Thread the shrimp onto skewers, or lay them directly across the grates. Soak wooden skewers for 30 minutes first.
  • Grill. Cook about 2 minutes, flip, and cook 1 to 2 minutes more until pink and opaque with a slight char.
  • Remove promptly. Take the shrimp off the grill right away so they do not turn rubbery, and serve hot.

Notes

Substitutions: Use lime in place of lemon if you like, and leave out the paprika for a plain version.
Tips: Do not marinate longer than 15 minutes because lemon juice changes the texture.
Storage: Refrigerate up to 3 days and reheat gently, since shrimp overcook easily.
Nutrition does not include the optional lemon wedges or sides.
