Ingredients
  

For the filling

  • 2 tablespoons butter Unsalted preferred
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced Any variety works, such as cremini or button
  • to taste salt and pepper

For the sandwiches

  • 4 slices bread Any kind, such as sourdough or whole grain
  • 4 slices cheese (like cheddar or mozzarella) Use your favorite type

Instructions
 

Preparation

  • In a skillet, melt the butter over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
  • Add the sliced mushrooms and cook until they are tender and brown, about 5-7 minutes. Season with salt and pepper.

Cooking

  • In another skillet, place a slice of bread and top it with a slice of cheese and a portion of the garlic mushroom mixture. Top with another slice of bread.
  • Cook on medium heat until the bread is golden brown, about 3-4 minutes on each side, and the cheese has melted.
  • Repeat for the remaining sandwiches.

Serving

  • Serve hot with crispy potato chips or a fresh green salad, or enjoy with a light tomato soup.

Notes

For extra flavor, add fresh herbs like thyme or parsley to the mushroom mixture. To store, let the sandwiches cool and keep in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet over medium heat.
