  • 1 lb ground chicken
  • 1 cup seasoned breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2 large eggs
  • 2 cloves garlic, minced Use fresh garlic for stronger flavor.
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup chopped parsley (optional) Can be omitted.

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, eggs, minced garlic, salt, pepper, and parsley (if using). Mix well until all ingredients are combined.
  • Transfer the mixture into a greased loaf pan and shape it into a loaf.

Cooking

  • Bake for about 45-50 minutes or until the internal temperature reaches 165°F (74°C).
  • Let it rest for a few minutes before slicing and serving.

Notes

Make sure not to overmix the ingredients, as this can make the meatloaf tough. If you like it a bit spicier, add some red pepper flakes to the mixture.
