  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning (or a mix of dried basil, oregano, and thyme)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (for garnish)

Preparation

  • Preheat your oven to 400°F.
  • Wash and scrub the potatoes, then cut them into wedges.

Mixing Ingredients

  • In a large bowl, mix together olive oil, minced garlic, Parmesan cheese, garlic powder, paprika, Italian seasoning, salt, and black pepper.
  • Toss the potato wedges in this mixture until they are well coated.

Baking

  • Line a baking sheet with parchment paper or lightly grease it.
  • Arrange the wedges in a single layer, skin-side down.
  • Bake for 35-40 minutes, flipping halfway through, until they are golden brown and crispy on the edges.
  • Remove from the oven and sprinkle with fresh parsley.

Notes

For extra crispiness, soak the potato wedges in water for 30 minutes before baking. Experiment with different seasonings and ensure even cutting for uniform baking.
