Ingredients
  

Main Ingredients

  • 50-75 g unsalted butter, divided Divided into halves
  • 5 cloves garlic, finely minced Use more for stronger garlic flavor
  • 2 cups white rice (uncooked) Long grain, medium grain, short grain (sushi rice) or basmati
  • 3 cups chicken stock/broth, low sodium Vegetable broth can be used for a vegetarian version
  • ¾ tsp cooking/kosher salt Or 1/2 tsp table salt
  • 1 tbsp parsley, finely chopped Plus extra for garnish

Instructions
 

Preparation

  • No need to rinse the rice, it will be fluffy using the right ratio of liquid to rice.
  • Melt half the butter in a large saucepan over medium-high heat, then add garlic and cook for 30 seconds until light golden.
  • Add the rice and stir for 30 seconds, or until the grains turn translucent.
  • Add the stock and salt, turn heat up to high, then once bubbling, cover and reduce heat to low.
  • Cook the rice for 15 minutes; do not stir or lift the lid.
  • After cooking, let it rest for 10 minutes without removing the lid.
  • Fluff the rice with a fork, mix in the remaining butter until melted, and toss through parsley.
  • Serve in a dish and sprinkle with extra parsley.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat with a splash of water or broth. Garlic rice can be frozen for up to 3 months.
