Ingredients
  

Main Ingredients

  • 1 lb ground turkey
  • 4 cup mixed vegetables bell peppers, broccoli and carrots, chopped
  • 3 tbsp low-sodium soy sauce or tamari or coconut aminos
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger minced
  • salt and pepper to taste
  • 4 cup cooked rice or noodles for serving

Cooking

  • Chop the vegetables into small, even pieces.
  • Heat the olive oil in a large skillet over medium heat and saute the garlic and ginger for one to two minutes, until fragrant.
  • Add the ground turkey and cook, breaking it apart, for about 5 to 8 minutes, until browned and cooked through to 165 degrees F.
  • Add the mixed vegetables and stir-fry for 5 to 7 minutes, until tender but still crisp.
  • Pour in the soy sauce, season with salt and pepper and stir to coat.
  • Serve hot over cooked rice or noodles.

Notes

Ground turkey must reach 165 degrees F. Use tamari or coconut aminos for a gluten free version. Leftovers keep three to four days in the refrigerator. Nutrition is an estimate and includes one cup of cooked rice per serving.
