  • 1 cup gluten-free flour blend Use a blend that includes rice flour, potato starch, and tapioca starch.
  • 2 large eggs For a vegan option, substitute with flaxseed 'egg' mix.
  • ½ cup brown sugar or coconut sugar Adjust based on personal preference for sweetness.
  • 1 tsp vanilla extract Enhances flavor.
  • ½ tsp salt Boosts flavor.
  • ½ cup chocolate chips or nuts (optional) Fold in if desired.

Preparation

  • Preheat the oven to 350°F (175°C).
  • Peel and mash the ripe bananas in a bowl.
  • In another bowl, mix the gluten-free flour blend, salt, and sugar.
  • In a separate bowl, combine the mashed bananas, eggs, and vanilla extract.
  • Gently combine the wet and dry ingredients together, being careful not to over-mix.
  • Fold in chocolate chips or nuts if using.
  • Pour the batter into a greased loaf pan.

Baking

  • Bake for about 60 minutes, checking with a toothpick after 45 minutes to avoid over-browning.
  • Once cooked, allow the bread to cool before slicing.

Notes

Store wrapped on the counter for up to three days or refrigerate for longer storage. Can be frozen for easy snacking later. For variations, try adding walnuts, pecans, or even a swirl of peanut butter.
