Cupcake Ingredients

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened Make sure it's at room temperature.
  • ¾ cup granulated sugar
  • 2 large eggs Or substitute with applesauce or flaxseed mixture.
  • 2 teaspoons vanilla extract
  • ½ cup whole milk

Preparation

  • Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  • In a bowl, whisk together flour, baking powder, and salt.
  • In another bowl, cream the softened butter and sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  • Gradually mix in the dry ingredients, alternating with the milk, starting and ending with the flour mixture.
  • Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool before frosting as desired.

Notes

Store Gnome Cupcakes in an airtight container at room temperature for up to three days. They can be refrigerated for up to a week as well. Allow them to come to room temperature before serving. Avoid overmixing the batter to keep the cupcakes light and fluffy.
