Ingredients
  

For the toffee

  • 2 sleeves graham crackers Use plain graham crackers.
  • 1 ¼ cups butter (2 1/2 sticks) Unsalted butter recommended.
  • 1 ¼ cups brown sugar Packed brown sugar for best results.
  • 2 ½ cups chopped pecans Optional; can substitute with other nuts.
  • 1 teaspoon vanilla extract For flavor enhancement.
  • ¾ cup mini semi-sweet chocolate chips Use more or less according to taste.

Preparation

  • Preheat your oven to 350°F (175°C).
  • Arrange the graham crackers in a single layer on a baking sheet lined with parchment paper or a silicone mat.
  • In a medium saucepan, melt the butter over medium heat.
  • Add the brown sugar and cook until it starts to bubble. Let it boil for 2 minutes while stirring constantly.
  • Remove the saucepan from the heat and stir in the vanilla extract and chopped pecans.
  • Carefully pour the hot pecan toffee over the graham crackers and spread it evenly with a spatula.
  • Bake in the oven for 10 minutes.
  • Remove from the oven and sprinkle the mini chocolate chips on top.
  • Let it cool on the baking sheet for 1 hour or until it is firm.

Notes

For extra crunch, consider adding chopped nuts like almonds or walnuts. For saltiness, sprinkle sea salt on top of the chocolate chips. Keep an eye on the caramel mixture while it's boiling to prevent burning.
