Cookie Ingredients

  • ½ cup granulated sugar plus additional for rolling For rolling cookies
  • ½ cup powdered sugar
  • 1 large egg
  • ½ cup butter, softened Must be softened to room temperature
  • ½ cup vegetable oil Can be substituted with melted coconut oil or another neutral oil
  • ½ teaspoon vanilla
  • 2 cups flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cream of tartar Can be substituted with baking powder if omitted

Instructions

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, cream together the granulated sugar, powdered sugar, butter, and vegetable oil until light and fluffy.
  • Beat in the egg and vanilla.
  • In a separate bowl, whisk together the flour, baking soda, salt, and cream of tartar. Gradually add this dry mixture to the wet ingredients, mixing until well combined.
  • Roll the dough into small balls and roll them in additional granulated sugar.

Baking

  • Place the cookies on a baking sheet lined with parchment paper and flatten slightly.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies taste best fresh and warm. You can add sprinkles or icing for a festive touch. Store in an airtight container at room temperature for up to one week, or freeze for longer storage. Chill the dough for 30 minutes if too sticky to roll.
