Salad Ingredients

  • 1 cup crushed pineapple, drained Ensure to drain well to avoid excess liquid.
  • 1 cup water
  • 2 packages (3 oz each) lime Jello
  • 1 cup mayonnaise Can substitute with Greek yogurt or sour cream.
  • 1 cup evaporated milk Can substitute with regular cream for a richer taste.
  • 1 cup small curd cottage cheese
  • 1 cup chopped walnuts Can substitute with pecans or omit for a nut-free version.

Preparation

  • In a saucepan, combine the reserved pineapple juice and enough water to make 1 cup of liquid. Bring it to a boil.
  • Remove from heat and dissolve the lime Jello in the hot mixture.
  • Allow it to cool until it's thickened slightly.
  • Stir in the mayonnaise, evaporated milk, cottage cheese, and crushed pineapple.
  • Fold in the chopped walnuts.
  • Pour into a mold or serving dish and refrigerate until set.
  • Serve chilled.

Notes

Store any leftover Jello salad in an airtight container in the refrigerator for about 3 to 5 days. The texture may change slightly but flavors will remain delicious. For a tropical twist, add shredded coconut or diced mango. You may also try different Jello flavors.
