Great Roasted Carrots

Ingredients
  

Main Ingredients

  • 1 kg carrots, peeled and ends trimmed Approximately 2 lb
  • 2 tbsp olive oil
  • ¾ tsp salt
  • ½ tsp black pepper
  • 2 cloves garlic, minced Optional, use a garlic press or microplane
  • Fresh parsley for garnish

Instructions
 

Preparation

  • Preheat your oven to 220°C/430°F (200°C fan).
  • Cut the carrots on the diagonal into 5 cm / 2" lengths.
  • Place the carrot pieces on a tray, drizzle with olive oil, and sprinkle with salt and pepper. Toss everything together.

Roasting

  • Roast the carrots for 20 minutes.
  • Remove the tray from the oven, push the carrots to one end, add the minced garlic, and toss everything together.
  • Roast for another 10 minutes.
  • Remove the tray again and toss the carrots to coat them in the garlicky oil.
  • Sprinkle with fresh parsley and serve.

Notes

For a sweet touch, sprinkle some honey or maple syrup before roasting. Experiment with different herbs like thyme or rosemary. Ensure the carrots are cut to the same size for even cooking.
