  • 1 cup long-grain rice Use Basmati or Jasmine for the best texture.
  • 2 cups water or broth Use chicken broth for added flavor.
  • 1 tablespoon olive oil For sautéing the rice.
  • 1 large lemon (juiced) Fresh lemon juice is essential for flavor.
  • 1 tablespoon fresh herbs (parsley or dill) Chopped, for flavor garnish.
  • 1 clove garlic (minced) Optional, for additional flavor.

Seasonings

  • 1 teaspoon salt Adjust to taste.
  • ½ teaspoon black pepper Adjust for seasoning.
  • ¼ teaspoon turmeric For coloring the rice.

Instructions
 

Preparation

  • Rinse the long-grain rice under cold water until the water runs clear.
  • Chop the fresh herbs (parsley or dill) and set aside.
  • Juice the lemon and set aside.

Cooking

  • In a medium saucepan, heat olive oil over medium heat.
  • Add the rinsed rice and sauté for about 2 minutes until the rice is lightly toasted.
  • Add the water or broth, lemon juice, garlic, salt, pepper, and turmeric.
  • Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 18-20 minutes or until the liquid is absorbed.
  • Once cooked, remove from heat and let it rest covered for 5 minutes.
  • Fluff the rice with a fork and stir in the chopped herbs.

Notes

Adjust the lemon juice to taste and serve as a side dish with grilled meats or vegetables. This rice can be made in a rice cooker by following the same ratio of rice to liquid.
