Greek-Style Chicken Gyros with Homemade Tzatziki

Ingredients
  

For the Chicken Marinade

  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

For the Tzatziki Sauce

  • 1 cup Greek yogurt
  • ½ piece cucumber, grated and drained
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste

For Assembly

  • 4 pieces pita or flatbreads
  • Sliced tomatoes, onions, and lettuce for garnish

Instructions
 

Preparation

  • In a bowl, combine the olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add the chicken breasts and toss well to coat. Cover and marinate in the fridge for at least 30 minutes (or up to overnight if preparing ahead).
  • While the chicken marinates, mix the Greek yogurt, grated and well-drained cucumber, lemon juice, minced garlic, chopped dill, salt, and pepper in a small bowl. Stir until everything is evenly combined. Chill in the refrigerator to let the flavors meld.

Cooking

  • Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for 6-7 minutes per side, or until golden and cooked through. Let the chicken rest for a few minutes before slicing it thinly.
  • Warm the pita or flatbreads in a dry skillet or microwave for a few seconds until soft.

Assembly

  • Layer each pita or flatbread with sliced chicken, generous spoonfuls of tzatziki, and your favorite fresh toppings—sliced tomatoes, onions, and lettuce.
  • Roll up your gyros or fold them in half. Serve immediately and enjoy!

Notes

Marinate the chicken overnight for even more flavor. Feel free to add other toppings like olives or feta cheese for an extra Greek twist. Leftovers should be stored separately; chicken can last for up to 3 days in the fridge. Tzatziki sauce can be stored for about a week.
