Ingredients
  

For the Sandwich

  • 1 cup chickpeas, rinsed and drained Can substitute with white beans
  • 2 cups green cabbage, shredded
  • 1 cup fresh herbs (basil, dill, parsley), chopped
  • 2 slices whole grain or sprouted bread Choose based on preference

Optional Ingredients for Extra Flavor

  • 1 none jalapeño, diced For heat
  • 1 none avocado, sliced Provides creaminess
  • 1 tablespoon lemon juice To brighten flavors
  • 2 tablespoons nutritional yeast Adds a cheesy flavor

For the Dressing

  • 1 cup fresh spinach
  • ¼ cup nutritional yeast
  • ¼ cup fresh herbs (parsley or basil)
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • to taste none salt and pepper

Instructions
 

Preparing the Dressing

  • Wash all fresh ingredients.
  • In a blender, combine spinach, avocado, nutritional yeast, and herbs.
  • Add lemon juice and apple cider vinegar.
  • Blend until smooth, adding water if too thick.
  • Season with salt and pepper, blending again.

Assembling the Sandwich

  • Spread the dressing on slices of bread.
  • Layer chickpeas, cabbage, and herbs on one slice.
  • Add optional ingredients if desired.
  • Top with the other slice of bread, cut in half, and serve.

This sandwich is versatile; feel free to customize with different proteins and crunchy vegetables.
