Main Ingredients
- 1 lb ground beef 80 percent lean, drained after browning
- 4 flour tortillas 10 inch
- 2 cup shredded cheddar cheese
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ tsp kosher salt
- ¼ tsp black pepper
- 1 tbsp unsalted butter for the griddle
- ½ cup sour cream for dipping
- ½ cup salsa for dipping
Cooking
Heat the surface. Warm a flat top griddle or large skillet over medium heat for about 5 minutes.
Cook the filling. Brown the beef in a skillet for 6 to 7 minutes until no pink remains and a thermometer reads 160 degrees F, drain, then toss with the onion powder, garlic powder, salt, and pepper.
Build each round. Butter the griddle, set a tortilla down, and cover half with 1/2 cup cheese and one quarter of the beef before folding it closed.
Brown and flip. Cook 2 to 3 minutes per side until deep golden and the cheese is fully melted, keeping finished rounds warm.
Cut and serve. Rest for 1 minute, slice into wedges, and serve with sour cream and salsa.
Substitutions: Use pepper jack for a spicy kick or swap half the beef for ground turkey cooked to 165 degrees F.
Tips: Warm the tortillas first so they fold without cracking, and drain the beef well so the filling stays dry.
Storage: Refrigerate leftovers in an airtight container for up to 3 days and reheat in a skillet over low heat until the center reaches 165 degrees F.
