Main Ingredients
- 24 oz beef sirloin or ribeye cut into even cubes
- ¼ cup olive oil
- ¼ cup lemon juice fresh
- 3 cloves garlic minced
- 1 tsp paprika
- ½ tsp ground cumin
- 1 tsp dried oregano
- ½ tsp black pepper
- 1 tsp salt
- 1 tbsp honey optional
- ¼ cup plain yogurt optional
- 2 bell peppers cut into chunks
- 1 large red onion cut into chunks
Cooking
Marinate. Whisk the oil, lemon juice, garlic, spices, salt, honey, and yogurt, reserve a few spoonfuls, then coat the beef and chill 2 hours or overnight.
Skewer. Thread the beef onto skewers, alternating with pepper and onion chunks. Soak wooden skewers for 30 minutes first.
Grill. Heat the grill to medium high, then cook the kebabs 8 to 10 minutes, turning every couple of minutes and brushing with the reserved marinade.
Check. Cook until the beef reaches 145 degrees F in the center.
Rest. Rest the skewers a few minutes before serving.
Substitutions: Use extra lemon juice in place of the honey and add fresh herbs for a Mediterranean flavor.
Tips: Reserve clean marinade before it touches the raw beef and do not reuse the used portion.
Storage: Refrigerate cooked beef up to four days.
Nutrition includes the optional honey and yogurt.
