Salad Ingredients

  • 1 grilled chicken breast, sliced
  • 2 cups romaine or mixed greens
  • ½ avocado, diced
  • ½ cup cherry tomatoes, chopped
  • ½ cup cucumber, sliced
  • ½ cup grilled corn
  • 1 tbsp olive oil
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp sea salt
  • ½ tsp chili flakes (optional) Add for a little heat

Avocado Dressing

  • ½ avocado
  • ¼ cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 2 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper

Instructions
 

Preparation

  • Season the chicken breast with salt, black pepper, and garlic powder. Grill for about 5-6 minutes on each side until fully cooked. Let it rest for a few minutes before slicing.
  • In a blender, combine avocado, Greek yogurt, lemon juice, minced garlic, olive oil, salt, and black pepper. Blend until smooth.

Assembly

  • In a bowl, place the chopped romaine or mixed greens. Add diced avocado, chopped tomatoes, sliced cucumber, and grilled corn.
  • Arrange the sliced grilled chicken on top of the salad. Drizzle the avocado dressing over everything and sprinkle chili flakes if desired.
  • Mix all the ingredients together and enjoy your fresh salad!

Notes

For meal prep, grill extra chicken and store it for future salads. You can experiment with different greens and veggies based on what's seasonal or your personal preferences.
